I tend to just leave automatic merchandising on, as I look at TEW as a booking game rather than a manufacturing and marketing game. The other possibility is to set your own merchandising levels for each worker, which someone else here could probably explain better than I could. Suffice to say it's complicated and almost always loses money unless you know what you're doing. :D
