New to the game - few Questions about Databases

So, I downloaded the Golden Age database, as that's probably my favorite era.

 

If I want to just let things start at that timeframe (March 1987) and let the future be a surprise, outside of real wrestlers coming along in the future, could I delete all future dojos/federations/etc and delete end dates for current ones, and things would then play out based on how successful things were run?

Yup, you can use the Editor to remove all those things. You can Filter to show Yet to Debut workers or future companies, then mass delete them. The game will create new wrestlers - though this depends somewhat on the settings for this - and even create random companies now as needed.
