I haven't noticed any changes at least (athough I haven't done what you're suggesting). My suggestion would be, try it and find out :p If you're paranoid about "wrecking" your game, backup the save file and use the backup if Bad Stuff (tm) happens. I think it's only the drop-down boxes on the right (Mainstream, Traditional, etc) that affect popularity. And only then if you make a major change. If you change your product too much, you can do some serious damage to your fanbase (and popularity?), thus having less people attend your shows. But yeah, match ratio change isn't that serious, it'll just affect you if you change it too much, if the people want more/less angles than you use.
