AboardTheArk
This came to mind because for example when booking lucha libre there is no incentive to not just put the flippy guys against each other all the time, discounting the role of the "base" wrestler. So maybe some stylistical interactions that expand how a match gets bonuses or penalties would be intriguing. Luchadors with 80+ flashiness getting a bonus for facing middleweight+ workers with 80+ safety. High striking workers getting a bonus for facing high selling workers. I know some of these are already there on their own as bonuses, so maybe I'm being redundant.
Adam Ryland
That would have the long-term effect of narrowing the gameplay experience; people would very quickly work out the beneficial match-ups (and what to avoid if there are corresponding penalties) and just exploit it for cheap gains. It wouldn't involve any skill or judgement, it'd just be down to memorisation, which is generally a path to avoid in game design. Additionally, note that what you phrased as a negative in your opening paragraph could just as easily be seen as a strength; that you have a lot of freedom in what you book and aren't given incentives to book the same formula over and over.
