OldSkoolHeel
What am I missing? To be clear, in my mind a biker is a fat or quite large guy who wears a leather jacket and jeans and acts tough. I'm not talking about a comedy greaser here. What is it about that kind of character that makes it so risky?
Gungner
Think Hell's Angels.
Matt_Black
Similarly, I was wondering how "Time Traveler" is a "complex, subtle" gimmick. I mean, I'm sure it COULD be, if Steven Moffat was booking it, but previous real-life attempts at it having usually been, "I'm Future Guy, from the FUTURE! Watch my Future-Wrestling, people of the 21st century!"
Bigpapa42
Gunger pretty much nailed it - think about Hell's Angels. Members of outlaw motorcycle clubs are considered members of organized crime by many law enforcement agencies around the world.

Like with many gimmicks, there isn't a single way to play it. You can play it for laughs, or simply as less risky. Hence why its pretty easy to create new gimmicks. The default gimmicks are basically one take on a given gimmick, not every possible one.
