So 2 part question. If I have a guy go on a movie do I pay him the time he is gone?

Also what movie has ever been 11 months long for a worker to be gone? That seems alot longer to be gone than needed.

If he's on a written contract, yes you pay him.

Maybe he filmed a trilogy back to back to back?

Is there any benefit to booking a match such that the match intensity and/or match danger is greater than the settings listed for your product? For instance, if my product's match intensity is 20% and match danger is 5%, would increasing the match intensity or match danger result in a potentially higher match grade?

How does applying for a vacant booker position work? Do I need to be unemployed? I'm currently the booker for a company and apply for positions when they appear. But I keep losing out to people with less booking skill and reputation than myself. Do I have to leave the company I'm with first before applying for a position? Or am I doing something wrong?

Will having a manager help a workers stats increase? I've got some guys who I'd really like to pick up some mic skills and wondering if this was the best option.

Yes, use them together in angles. The workers' Charisma, Mic and Acting skills will improve, even if he's not rated on entertainment skills in the angle.
